Yields: 3-4 servings
Prep time: 20 minutes (+ marination time)
Cook time: 30-40 minutes

Ingredients:

  • 500g Boneless Chicken Breast or Thighs, cut into bite-sized pieces (Find quality chicken options at Gross & Grön)
  • 1 packet (approx. 50g) Shan Chicken Tikka Masala Spice Mix (The star ingredient! Available here!) 
  • 1/2 cup Plain Yogurt (full fat recommended for creaminess)
  • 1 tbsp Ginger Garlic Paste 
  • 2-3 tbsp Cooking Oil or Ghee
  • 1 large Onion, finely chopped or pureed
  • 1 can (400g) Crushed Tomatoes or 2 cups Tomato Puree
  • 1/2 cup Heavy Cream (or Coconut Cream for dairy-free/vegan adaptation if using tofu/veg)
  • 1/4 cup Water or Chicken Broth (adjust as needed for consistency)
  • Fresh Cilantro (Coriander leaves), chopped, for garnish
  • Optional: 1 tsp Lemon Juice
  • Optional: Pinch of Sugar (to balance acidity)
  • Optional: 1 Green Chilli, slit (for extra heat)

Equipment:

  • Mixing Bowl
  • Large Pan or Pot (like a Karahi or Dutch oven)
  • Grill Pan, Outdoor Grill, or Baking Sheet (for cooking chicken)

Instructions:

Step 1: Marinate the Chicken

  1. In a mixing bowl, combine the chicken pieces, plain yogurt, ginger garlic paste, and HALF of the Shan Chicken Tikka Masala Spice Mix packet.
  2. Mix well, ensuring all chicken pieces are thoroughly coated.
  3. Cover the bowl and refrigerate for at least 30 minutes, or ideally for 2-4 hours (or even overnight) for maximum flavour infusion.

 

Step 2: Cook the Chicken

  • Grill/Pan-Fry Method (Recommended for flavour): Heat a grill pan or outdoor grill over medium-high heat. Cook the marinated chicken pieces in batches until cooked through and slightly charred on the edges (about 5-7 minutes per side). Alternatively, pan-fry in a little oil until cooked.
  • Oven Method: Preheat your oven broiler (grill setting). Arrange marinated chicken on a baking sheet lined with foil. Broil for 8-12 minutes, turning once, until cooked and lightly charred. Keep a close eye to prevent burning.
  • Set the cooked chicken aside.

Step 3: Prepare the Tikka Masala Gravy

  1. Heat the oil or ghee in your large pan or pot over medium heat.
  2. Add the chopped/pureed onion and sauté until softened and lightly golden (about 5-7 minutes).
  3. Add the REMAINING HALF of the Shan Chicken Tikka Masala Spice Mix. Stir and cook for about 30-60 seconds until fragrant. Be careful not to burn the spices.
  4. Stir in the crushed tomatoes or tomato puree. Cook for 5-7 minutes, stirring occasionally, until the sauce thickens slightly and the oil starts to separate at the edges.
  5. Add the water or chicken broth, stir well, and bring the gravy to a gentle simmer.
  6. Reduce the heat to low. Slowly stir in the heavy cream (or coconut cream). Do not boil rapidly after adding cream.
  7. Optional: Add the pinch of sugar and lemon juice now, if using. Taste and adjust salt if needed (Shan mix contains salt). Add the slit green chilli if you like more heat.

Step 4: Combine and Finish

  1. Gently add the cooked chicken pieces to the simmering gravy.
  2. Stir to coat the chicken well. Let it simmer gently on low heat for another 5-10 minutes, allowing the flavours to meld together. Adjust consistency with a little more water/broth if it's too thick.
  3. Garnish generously with fresh chopped cilantro.
